These sweet potato French fries are super easy to make and unbelievably good.

2 or 3 sweet potatoes
olive oil
garlic powder, unsalted (optional)
onion powder, unsalted (optional)

Divine sweet potato fries with pan seared salmon

Preheat oven to 350 degrees F. Peel and cut sweet potatoes into 1/4 inch slices. Leave the slices as they are or cut shorter to your preference. Do not worry about the fries that taper off and are not precisely 1/4 inch square. They will all be good.

Place fries in a large oven pan. Pour some olive oil over them. Sprinkle salt and pepper the fries. Sprinkle some garlic and/or onion powder over the fries if desired. Using you hands (yes, they get oily) toss the fries to ensure all are covered with oil and spices. Spread them out evenly in one layer in the pan. Sprinkle paprika over the fries.

Bake for 30 minutes, turning after the first 15 minutes. Check to ensure they are cooked through, meaning a fork should go easily through a fry. Cook longer if necessary.
