This doesn’t have to be done on a grill, but it is a great way to create a potato side dish on a grill when making a meal. In this particular case, when I came up with this recipe, I was grilling a couple of beautiful wild salmon fillets with skin on. Traditional potatoes just weren’t going to cut it.
For four servings
2 medium potatoes
1 bunch spring onions
2 tablespoons butter
salt and pepper
Wash the potatoes and julienne with skin on. Place on a sheet of aluminum foil.
Dice the spring onions, including the usable parts of the green leaves. Add to the potatoes on the aluminum foil.
Cut butter into four or five pats and add to the mix. Sprinkle some salt and pepper over the potatoes. Hand toss all the ingredients. Wrap completely in aluminum foil.
Place on grill and cook approximately five minutes, flip and cook another five minutes.
